A widely used mixer dedicated to noodle dough. Specialized in mixing.
・A pin mixer suited for low- to medium-hydration noodle dough. High-speed rotation enables uniform mixing.
● Effect of Mixing:
When water is not distributed evenly, the dough develops areas with more or less moisture, resulting in inconsistencies in the finished noodle. The pins inside the drum are arranged in 8 directions around the central axis and rotate at high speed, enabling rapid and thorough mixing of flour and water. Improved hydration precision directly contributes to higher noodle quality.
