What are manual and multi-function models?

There are two types of noodle-making machines in Japan: "hand-made style" and "multi (roll) style," and Sanuki Noodle Machinery offers both types in its product lineup. The hand-made style faithfully reproduces traditional Japanese noodle-making methods and is suitable for water content levels of 40% to 65%. The multi-roll (roll) style uses a roll-pressing method and is suitable for water content levels of 26% to 43%.
